Description

Job Summary: Responsible for portioning, organizing, sanitizing, and quality controlling cheeses, as well as advising customers and maintaining the cheese cellar. Key Responsibilities: 1. Handling and quality control of dairy products. 2. Customer service and cheese advisory. 3. Organization and maintenance of the cheese cellar. 1\. Portion cheeses according to specified presentations, weights, cuts, and quality standards established by the company. 2\. Continuously restock and replenish the cheese cellar and display cases, ensuring product availability and proper presentation throughout the workday. 3\. Arrange and organize cheeses in the cellar applying FIFO (First In, First Out) rotation. 4\. Label and verify expiration dates, batch numbers, and weight for each portion and displayed presentation. 5\. Perform settlement and weighing of portioned products, verifying that the code corresponds to the product and the established price. 6\. Monitor and verify temperature and storage conditions of the cheese cellar, reporting any refrigeration issues to the immediate supervisor or maintenance team. 7\. Sanitize the cheese cellar daily, removing expired, deteriorated, or slow-moving products. 8\. Apply Good Manufacturing Practices (GMP) when handling cheeses: wearing gloves, face masks, hairnets, handwashing, and preventing cross-contamination. 9\. Clean and disinfect the cheese cellar, display cases, cutting and portioning tools, and all other work-related equipment daily. 10\. Serve and advise customers on cheese varieties, characteristics, aging, and uses, ensuring their satisfaction. 11\. Support the setup, ambiance creation, and continuous improvement of the Cheese Cellar as an evolving section, including display, signage, and tasting activities when scheduled.
