Prepare and/or assemble products, ensuring use of standard recipes, cuts, and assembly per customer specifications. a. Ensure use of and compliance with activities outlined in the production schedule sheet. b. Prepare cold, hot, or other meals specified in the Production Order for institutional clients and national or international flight crew and passengers. c. Perform hot and cold assembly according to client manual specifications (portion sizes, presentation, and quality). d. Inspect the cold room for raw materials and work-in-progress items to support production planning. e. Perform pre-preparation of raw materials as directed by the Production Supervisor. f. Ensure foods prepared for pre-assembly meet portion size and established preparation standards. g. Complete HACCP records to ensure proper compliance. h. Monitor adherence to BPM standards; complete temperature log forms during the assigned shift with real-time information. i.
